Oven-Roasted Vegetables
With gas prices on the high and it being scarce, we may find ourselves using the oven far more than usual.
Vegetables work especially well this way. You don’t need to do much - just a few things done right, and the oven takes care of the rest.

Ingredients
Peppers
Sweet potatoes
Broccoli
Beans (or any vegetables you have on hand)
Sea salt
Oregano
Fresh black pepper
Olive oil
(Optional) Breadcrumbs and parmesan
Method
Cut the vegetables into even pieces and spread them out on a sheet pan.
Sprinkle it with sea salt, oregano, and black pepper. Brush lightly with olive oil.
Roast in a preheated oven until the vegetables are cooked through and start to char at the edges.

Try not to crowd the pan - the vegetables roast better when they have space.
A light sprinkle of breadcrumbs and parmesan at the end adds a bit of texture, but it works just as well without it.
